REESE'S DATE BALLS

My healthified version of the candy bar.

If you couldn't tell, we LOVE chocolate and peanut butter around here. A lot. 😎


These little balls of joy are sure to satisfy.

You know the inside of a Reese's cup? Well these taste just like it, but better.

You can coat them in chocolate for a sweet treat.

Hubs will take these everyday over a Reese's candy bar.

A great swap for you candy bar munchers out there.

Or you can skip the chocolate coating and add some protein powder for an afternoon power snack.

So versitile.

& easy to make too!

WHAT YOU WILL NEED

  • Food processor or high speed blender.

  • Parchment paper

  • Measuring cups and spoons

  • Plate


FOR INGREDIENTS

  • Medjool dates, pitted - love getting mine at Costco

  • Natural peanut butter - Crazy Richards is the way to go for this recipe

  • Peanuts

  • Vanilla - I use real vanilla

  • Salt - Terrasoul Himalayan sea salt is chefs kiss

  • Chocolate, optional - Chocolove 55% candy bar is the way to go

  • Protein powder, optional - Four stigmatic is a great option (chocolate, peanut butter and vanilla all work great)

INGREDIENTS

  • 14 medjool dates, pitted

  • 1/2 cup natural peanut butter

  • 1/4 cup peanuts, heaping

  • 1 teaspoon vanilla

  • pinch of salt

  • one chocolate bar, optional - chocolove 55% candy bar is the way to go

  • 2 tablespoons protein powder, optional - chocolate, peanut butter and vanilla all work great


DIRECTIONS

  1. Add dates, peanut butter, peanuts, vanilla and salt to a food processor and blend. If you want to add the protein powder, do it here.

  2. At first it will clump into a ball. Keep mixing until it breaks up and creates fine pieces that stick when you press them together.

  3. Pour mixture onto a plate and mold into a ball with your hands.

  4. Slice the ball into four pieces with a sharp, damp knife and roll into four individual balls.

  5. Slice each ball into four pieces and roll into balls again, yielding a total of 16 date balls.

  6. If you want to make them extra lovely, melt one bar of chocolate (or 3/4 cup chips) in the microwave. (I like starting with one minute, stir, then 30 seconds, stir and then 15 until you get the consistency smooth.)

  7. Store in fridge for up to one week. Enjoy!



NOTES

  • Medjool dates a widely available at most grocery stores. I usually purchase mine from Aldi once a month and store them in my freezer until I am ready to use them. Costco has great ones too. & Trader joes!

  • Feel free to switch it up for another nut butter or nut if you don't have peanut on hand or can't have it. Just remember they probably won't taste like Reese's then.

  • If you are using a high speed blender instead of a food processor, expect to pulse for longer than one minute. You will also need to push the sides down a few times to loosen the mixture from the blades.
