BOOZY BOURBON MONSTER COOKIES

WELCOME TO DAY 7 OF COOKIE WEEK.

That means it's the last day, gals and pals.

I hope you thoroughly enjoyed all these sweet treats and take it upon yourself to make some.

& of course send me pics and let me know how it went.


Three thoughts on monster cookies:

  1. Most recipes don't have enough peanut butter.

  2. Minute oats must be used instead of old fashioned.

  3. These are the best monster cookies ever (with or without the vanilla bourbon).

Okay, if you haven't tried like a million different monster cookie recipes in your lifetime trying to master it, then we can't talk. Kidding. We can.

But you don't have to look any further; this recipe is your new go to.

Chewy, moist and chock full of love and delicious ingredients.


WHAT YOU WILL NEED

  • Kitchenaid or hand mixer

  • Cookie scoop

  • Parchment paper

  • Cookie sheet

  • Mixing bowl


FOR INGREDIENTS

  • Butter, softened (salted or unsalted is fine. also, use plant butter if you need to. can use interchangeably.)

  • Peanut butter - I love Crazy Richards or Santa Cruz creamy peanut butter.

  • Granulated sugar

  • Brown sugar - love wholesome brand

  • Vanilla bean paste - I of course use my beloved vanilla bean paste from blue cattle truck company

  • Egg - loving happy egg right now

  • Vanilla bourbon - any will do the trick

  • Flour -King Arthur unbleached organic flour for the win

  • Baking soda

  • Salt - love terrasoul Himalayan sea salt

  • Cinnamon - love simply organic brand, optional

  • Oats - use minute oats, not old fashioned

  • Chocolate - I exclusively use Chocolove 55% chocolate for any baking recipe

  • M&M's


These cookies are super easy to make but WARNING!! They do need some chill time in the fridge. If you can handle that. 🤗


First chop the chocolate into chunks (if not using chips) and assemble the dry ingredients in a mixing bowl: flour, soda, salt, cinnamon and oatmeal.

Combine the softened butter, peanut butter, and sugars. Beat until thoroughly mixed and creamy.

Add vanilla, eggs and bourbon and beat until combined.

With the mixer running, add the dry ingredients to the wet and mix until a nice even dough forms.

Fold in chocolate chips and m&m's. Cover and refrigerate for one hour.

Remove from refrigerator, roll into balls, press down lightly and bake for 10 minutes at 350°F.

  • 1/2 cup granulated sugar

  • 1/2 cup brown sugar

  • 1 teaspoon vanilla bean paste, regular vanilla is fine too

  • 2 eggs

  • 2-3 tablespoons vanilla bourbon - any will do the trick (optional)

  • 1/2 cup flour, unbleached organic for the win

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/4 teaspoon cinnamon, optional

  • 1 cup oats - use minute oats, not old fashioned

  • 1/2 cup chocolate chunks or chips

  • 1/4 cup M&M's


DIRECTIONS

NOTES

  • Plant butter and regular butter can be used interchangeably in this recipe, as always.

  • I like to use the little baking M&M's just simply because they are not my favorite chocolate in the world.

  • The dough will keep in the freezer nicely for up to 4 months.

  • These can be made 100% dairy free by using plant butter, Chocolove 55% chocolate bar and Unreal brand M&M's.

Remember the booze is optional.

But the cookies are not.
