Made @chocolatecoveredkatie Deep Dish Cookie Pie last night. Yum! This was a win. Quite the treat since I don’t bake with sugar much anymore. Will try replacing the brown sugar with dates next time, but regardless, this is a repeat item.
INGREDIENTS 2 cans Garbanzo Beans (rinsed, drained and peeled if you have the patience) 1 C quick oats 1/4 C applesauce 1/4 C nut butter (I used peanut butter or 3 T oil) 2 tsp vanilla extract
1/2 tsp almond extract 1/2 tsp baking soda 2 tsp baking powder 1/2 tsp salt 1.5 C brown sugar 1 C chocolate chips ⠀⠀ DIRECTIONS
1. Preheat oven to 350 degrees. 2. Blend everything but the chocolate chips in a food processor until you reach a nice smooth consistency. Stir in chocolate chips. 3. Grease a 9-10 inch springform pan and pour in batter. 4. Bake for 35-40 minutes, cool for 10 minutes. 5. Remove springform from pan bottom, slice and enjoy!
This recipe is incredible. & packed full of protein from the beans if that is something you worry about.
The beans are completely tasteless and give it a fudge consistency. My favorite!
pro-tip : (rinsing the beans until the bubbles are gone will help with gas, so will removing the skins.)
