STRAWBERRY BANANA BAKED OATMEAL

It’s strawberry season.

Yippeee!!

I managed to get 10 quarts of beautiful & delicious strawberries out of our neighbors strawberry patch this week so I had to make something delicious.

Actually, I made lots of delicious things, but this is the one i’m sharing today. 😉


STRAWBERRY BANANA BAKED OATMEAL


This is the perfect make ahead breakfast for the week.

It’s hearty, delicious, can be eaten cold and grabbed for an on the go brekkie or warmed and enjoyed with yogurt, fresh berries and some maple syrup.

INGREDIENTS

  • 1 cup old fashioned oats

  • 1 cup oat flour (oat flour is just blended oats)

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon

  • 1/2 teaspoon sea salt

  • 1 cup milk (I used my vanilla bean coconut milk recipe)

  • 1 cup water

  • 1 flax egg (1 T flax meal + 3 T water, let gel up), can substitute egg

  • 2 tablespoons coconut oil, melted

  • 2 teaspoons vanilla bean paste

  • 1 ribe banana, mashed

  • 1 ripe banana, sliced

  • 1 1/2 cup strawberries


DIRECTIONS

  1. Preheat oven to 375° and line 8x8 pan with parchment paper.

  2. Make flax egg so it has time to set up. Combine dry ingredients : oats, oat flour, baking powder, cinnamon and salt.

  3. Combine wet ingredients : milk, water (see notes), flax egg, coconut oil, vanilla bean paste and mashed banana.

  4. Combine wet and dry ingredients and mix thoroughly. Fold in 1 cup of strawberries and add to 8x8 baking pan.

  5. Top with remaining 1/2 cup strawberries and sliced banana.

  6. Bake for 60 minutes or more. (see notes)

  7. Enjoy warm, cold or reheated. Add some coconut yogurt, fresh berries and maple syrup for a win!


NOTES

  • If you are using a milk that is more on the watery side (like almond milk) I recommend using 2 cups of milk instead of the water.

  • The cook time is different for me every time. It usually takes about 1 hour and 20 minutes but has set up within 60 minutes before. Just keep your eye on it and make sure the middle is set. If you like a runnier, milky oatmeal cook for less. If you want it more in bar form cook for 60+ minutes.
