SUNDRIED TOMATO PESTO

Bloody delicious.

The ultimate sandwich spread to spice up literally anything!

I love a good veggie sandwich.

& this spread is the ultimate veggie sandwich topper.

Now, I realize, veggie sandwiches are not people's main go-to.

I get it. It can be boring.

But this stuff can make anything delicious.

It is also a great spread to add to a charcuterie board.

(side note : why can't we call them charcoochee boards? It's so much more fun.) 🤗


Anyway, its a fan favorite and so easy to whip together and keep in your fridge for the week.

It's literally good slathered on anything.

You can put it on top of crusty bread, dip veggies in it, use it as pasta sauce and, another personal favorite, on top of a chickpea pancake (savory pancakes for the win!).

You can't go wrong with the flavor profile here.

It is versatile and will amplify any dish.

The recipe is easy and it will keep in your fridge for one week.

INGREDIENTS

  • 1/2 C cashews

  • 8.5 oz jar of sun-dried tomatoes, packed in oil

  • 1 T sun dried tomato oil from the jar

  • 3-4 T evoo

  • 3 cloves garlic, minced

  • 1 teaspoon balsamic vinegar

  • pinch of salt

  • 1/4 cup fresh basil, optional


DIRECTIONS

  1. 1. Add cashews, tomatoes, oil from jar, garlic, vinegar salt, basil and 1 T evoo to a food processor and blend until a clumpy, nutty mixture forms.

  2. 2. Pour remaining 2-3 T olive oil to food processor while mixing to desired consistency.

  3. 3. Refrigerate for 2 hours.

  4. 4. Enjoy.


NOTES

  • If you are not a fan of basil, either remove it entirely or use parsley instead.

  • I always go lighter on the oil but feel free to add to your desired consistancy.

  • This recipe will keep in an airtight glass jar in your fridge for one week.

  • To be honest, this spread is good from the get go so if you are short on time, no need to refrigerate.

  • Trader Joes has some great sun dried tomatoes in a bag - not packed in oil. They taste so fresh and delicious. Then I can use my own high quality evoo. The ones in the jar work well too.
