VANILLA BEAN COCONUT MILK

Today I'm hitting you with a very simple recipe.

One that is almost always stocked in my fridge.

It is definitely a sweet milk so I like to use it when baking, on cereal or granola, in my hot chocolate and as a creamy element in some of my cocktails.

Which is why you're getting it today. You may need to reference it later this week. 😉


It is creamy, the perfect amount of sweet and has the hint of vanilla bean makes it smell llike you just pulled a delicious baked good out of the oven.

This recipe only has 4 ingredients and comes together so much faster than running to the store to grab some milk.

It's a winner.


WHAT YOU WILL NEED

  • Blender

  • Glass jar with a lid

  • Measuring cups and spoons


FOR INGREDIENTS

  • Coconut milk - I love Thai kitchen brand, organic

  • Vanilla bean paste - I of course use my beloved vanilla bean paste from blue cattle truck company

  • Water

  • Maple syrup - Trader Joes or Costco makes a great one for a reasonable price


Like I said earlier, this recipe is so simple.

Step one : combine all ingredients in a blender and mix for 30 seconds on low.

Step two : pour into a glass container with a lid and store in the fridge for up to 5 days.

Make sure to give it a good shake before using to evenly distribute the ingredients again.

INGREDIENTS

  • 1 (14 oz) can coconut milk - I love Thai kitchen brand, organic

  • 1 teaspoon vanilla bean paste

  • 1 1/2 cup water

  • 1 tablespoon maple syrup


DIRECTIONS

  1. Add coconut milk, vanilla bean paste, water and maple syrup to a blender. Blend on low speed for 30-60 seconds. Keep the speed low so you don't froth the milk too much.

  2. Pour into airtight glass container and store in fridge.

  3. Enjoy!


NOTES

  • The amount of water may very depending on how thick or runny your canned coconut milk is. Adjust accordingly.

  • If you want it sweeter, add more maple syrup. 1T is usually enough for me.

  • Make sure to give it a good shake before pouring.

  • Will store in airtight glass jar for up to 5 days.
